Amy Shah’s professional path grew out of a personal and family history with food, health, and migration. Born in India and brought to the United States at about five, she later described watching her father, uncles, and grandparents develop type 2 diabetes after the family’s move, an experience that pushed nutrition and medicine to the center of her thinking. She studied nutrition at Cornell University, graduated with honors from the Albert Einstein College of Medicine, and completed training in internal medicine at Harvard’s Beth Israel Deaconess and in allergy and immunology at Columbia.
