Breaking away from business conflicts, Taylor built his castle-like Old Taylor Distillery incorporating European innovations: corrugated rollers instead of millstones, copper vats replacing wooden mash tubs, and a revolutionary tiered-rack barrel storage system that became industry standard. During the early 2000s, Prohibition-themed bars became trendy across America, with secret entrances, passwords, and speakeasy aesthetics. The thirteen-year Prohibition period beginning in 1920 transformed drinking into a symbolic act of rebellion against moralizing forces. Even President Warren Harding kept bourbon in the White House, and the era's outlaw drivers evading the law eventually birthed NASCAR. Despite its glamorized image, Prohibition-era liquor was notoriously terrible. Consumer protections vanished as the industry went underground, and America forgot what good whiskey should taste like. Limited supplies of aged bourbon and imported spirits were stretched by adding industrial alcohol, which tripled in production between 1920-1925. Worse, much industrial alcohol was deliberately poisoned with government-approved denaturants ranging from soap to formaldehyde and sulfuric acid. The powerful whiskey industry failed to prevent Prohibition because they responded too late. Many industry leaders hid from the industry's shabby reputation, listing themselves as farmers rather than whiskey merchants in business directories. Bourbon distillers faced Wayne Wheeler, a tireless religious crusader who transformed single-issue lobbying. Working through the Anti-Saloon League (ASL), Wheeler kept his organization laser-focused on Prohibition while other temperance groups became distracted with multiple causes. Prohibitionists mastered emotional propaganda, distributing an estimated 100 million pamphlets with sensationalist titles and images of demons holding drunkards over hellfire. Industrial titans including Henry Ford, Rockefeller, Carnegie, and Du Pont supported Prohibition, believing it would boost worker productivity. When Prohibition finally passed in 1920, one soldier returning from World War I reportedly stared at the shuttered James E. Pepper distillery's "Born with the Republic" slogan and sighed, "Born with the Republic, died with democracy."

Resurrection and Reinvention

Virgin Mary statues in cut bathtubs dot the Kentucky countryside where nearly 95 percent of the world's bourbon is produced. This Catholic presence stems from Maryland Catholics who purchased land in north-central Kentucky in the late 18th century. After Prohibition's repeal, Kentucky's Catholic communities helped bourbon distilling reemerge while many other regions remained dry through local-option laws. Post-Repeal bourbon would be fundamentally different-virtually every brand underwent transformation regardless of whatever ancient date appeared on labels. Even established brands like Old Forester changed yeast strains, distillery locations, and recipes. In America's long contest between Jeffersonian and Hamiltonian ideals, Repeal represented a decisive victory for Hamiltonians. Of nearly 200 Kentucky distilleries operating before Prohibition, only half resumed business in 1933, and many quickly folded without sufficient capital. The industry consolidated into the Big Four: National, Schenley, Seagram, and Hiram Walker. As the bourbon industry resurrected, it created new partnerships between those with distilling knowledge and those with capital. Jim Beam, in his seventies, returned to distilling after working in a rock quarry and failing at citrus farming during Prohibition. Jim Beam found his financial backing from three Chicago men who pooled $15,000 to found the James B. Beam Distilling Company in 1934. Heaven Hill exemplified how new distilleries could manufacture heritage when needed. Founded by the five Shapira brothers who had owned Louisville department stores, the company hired Joseph Beam to handle distilling operations. Needing historical credibility, they named their distillery after William Heavenhill, a frontier distiller who had worked the land where they built their facility. The Stitzel-Weller distillery innovated by replacing traditional rye with winter wheat in their bourbon recipe to create whiskey that tasted better at a younger age. Julian "Pappy" Van Winkle, who had started as a Weller salesman in 1893, took control of Stitzel-Weller in the mid-1940s, focusing on wheated bourbons like Old Fitzgerald, Cabin Still, W.L. Weller Special Reserve, Weller Antique, and Rebel Yell. Following Repeal, the federal government established new regulations that would fundamentally reshape the bourbon industry. By 1933, barrel sales became illegal, requiring standardized bottle sizes. By 1936, standards of identity were established, and by 1938, "straight whiskey" officially required aging in new charred oak barrels for at least two years. The three-tier system separated producers, distributors, and retailers, preventing any single entity from controlling all tiers-limiting monopolies but creating distribution challenges that persist today. Just as bourbon was recovering from Prohibition, World War II disrupted the industry again. The spirits industry produced "cocktails for Hitler"-industrial alcohol essential for war materials. With whiskey production halted, Americans hoarded bottles despite industry pleas to share. Though the war ended in 1945, whiskey production remained halted another year as Prohibitionists argued grain was needed to feed a war-torn world. The postwar economic boom created perfect conditions for whiskey's return. Meanwhile, industry consolidation accelerated, with distillery numbers falling from 130 to 76 between 1933 and 1958, as the Big Four controlled over three-quarters of the market.

From Bourbon's Golden Age to Craft Revival

When Lewis Rosenstiel misread the Korean War's impact, he overproduced whiskey expecting government grain rationing that never came. Schenley found itself holding nearly 70% of America's aging whiskey stocks, creating a potential pricing disaster when taxes would come due. Rosenstiel's solution was brilliant: lobby Congress to extend the bonding period from eight to twenty years. This transformed his liability into an asset. Schenley launched a $21 million campaign promoting aged whiskey, increasing aging times across brands. The 1950s-60s became a golden age for bourbon consumers with well-aged whiskey at reasonable prices. In 1958, Graham Greene's "Our Man in Havana" perfectly captured the coming bourbon-scotch global competition through a scene where characters play checkers with mini-bottles of each spirit. Scotch held overwhelming global advantage, having accompanied the British Empire worldwide. But as America established Cold War military bases globally, bourbon followed. Bourbon's biggest challenge was consumer education. Climate differences between Kentucky and Scotland create fundamental aging distinctions: bourbon matures faster in Kentucky's hotter climate with new charred barrels, while scotch ages more slowly in Scotland's milder climate using previously-used barrels. In May 1964, Congress passed a resolution declaring bourbon "a distinctive product of the United States." Though receiving little fanfare initially, this resolution was actually Lewis Rosenstiel's brainchild, designed to protect bourbon in overseas markets. Though bourbon sales remained strong until the mid-1960s, they soon plummeted as consumer tastes shifted. The main cause of bourbon's decline came from an unexpected source: vodka. Vodka's assault on American spirits began with the Moscow Mule in 1946, a "Trojan horse" that infiltrated the American countryside. Its breakthrough came in 1947 when Hollywood star Joan Crawford served only vodka and champagne at a party, influencing other trendsetters. The baby boomers accelerated bourbon's decline, rejecting it as a symbol of the Establishment while embracing vodka's blank-canvas flexibility. By 1976-America's bicentennial-vodka sales surpassed whiskey for the first time, marking bourbon's darkest hour. While bourbon struggled through the 1970s, Maker's Mark defied industry trends. Founded in 1953 by Bill Samuels Sr. after his family's T.W. Samuels Distillery failed post-Prohibition, Maker's took a contrarian approach. When others slashed prices, Maker's raised them. The distinctive wheated bourbon came in square bottles dipped in red wax, resembling cognac and targeting upscale audiences with ads in The New Yorker. Bill Samuels Jr.'s marketing genius transformed Maker's Mark with their famous 1965 ad: "It tastes expensive... and is." This jujitsu move turned their biggest weakness into a strength. His masterstroke was getting Maker's onto airline beverage carts, creating national demand as travelers requested it at local liquor stores. America is now experiencing a second Whiskey Rebellion as craft distilleries have exploded from just a handful in 2000 to nearly six hundred by 2015. This craft movement parallels the "locavore" trend that transformed beer and wine culture. The rise of craft distilling reflects a reaction to Alexander Hamilton's industrial vision overshadowing Thomas Jefferson's agrarian ideals. New distilleries promise to reintroduce variety, with Corsair Distillery leading the "alt-whiskey" movement using unconventional ingredients like buckwheat and quinoa. Despite producing less than 5% of American spirits by 2015, craft distillers receive outsized press coverage, prompting established companies like Buffalo Trace and Jim Beam to experiment more themselves. Bourbon's story is ultimately about who tells it most convincingly. As American whiskey consolidated, regional styles disappeared and production standardized. Eight major companies now make most American whiskey, producing good but increasingly homogeneous products. The bourbon story, like America itself, remains open to reinterpretation-its most enduring tradition may be its ability to reinvent its own narrative.
