せっかくの茶葉が渋すぎたり薄かったりしませんか？お湯の温度と成分の関係を知るだけで、いつものお茶がプロの味に変わります。最後の一滴まで旨味を引き出し、日常に心安らぐひとときを取り入れましょう。
お茶の味を左右するのは茶葉の値段以上に「お湯の温度」と「蒸らし時間」が9割を占めています。お湯の温度をコントロールするだけで、自分好みの味にデザインできるのです。
怎么泡茶
お茶の味は「お湯の温度」でコントロールできます。リラックス効果のある甘み成分「テアニン」は低い温度でも溶け出しますが、渋み成分の「カテキン」は高温で一気に溶け出す性質があります。そのため、沸騰したお湯を一度湯呑みに移すなどして、70度から80度程度まで「湯冷まし」をしてから淹れることで、渋みを抑えた旨みの強いお茶になります。
良かれと思って急須を揺すってしまうと、茶葉から余計な雑味や強い苦味が出てしまうためです。美味しい煎茶を淹れるには、お湯を注いだあと、茶葉が自然にゆっくりと開くのをじっと待つのが正解です。標準的な煎茶であれば約1分、茶葉が細かい深蒸し煎茶であれば30秒ほど静かに待ちましょう。
急須から注ぎ出す際の「最後の一滴」のことです。この一滴にはお茶の旨みが最も凝縮されているため、残さず絞りきることが推奨されます。また、最後の一滴まで出し切ることで、急須の中に水分が残らず茶葉がふやけすぎるのを防げるため、二煎目も美味しく淹れられるようになります。
いいえ、ほうじ茶や玄米茶、番茶の場合は、沸騰したての熱湯（95度以上）をそのまま注ぐのが基本です。これらのお茶の魅力である香ばしい香りは、高い温度で一気に立ち上がる性質があるためです。煎茶とは異なり、高温・短時間（約30秒）で抽出することで、部屋いっぱいに広がる香りを楽しむことができます。
日本の水道水はお茶に適した「軟水」ですが、そのままではカルキ臭が香りを邪魔してしまいます。まずは水をしっかりと沸騰させ、そこからさらに2分から3分ほど沸かし続けることでカルキを抜くのがプロの推奨する方法です。ミネラルウォーターを使用する場合も、お茶の成分を引き出しやすい国産などの軟水を選ぶようにしましょう。
