In nineteenth-century America, corn was transformed into more easily transportable products: pigs and whiskey. The Renick family pioneered this livestock system, moving from Virginia to Ohio's fertile Scioto Valley by 1805. Their method involved feeding cattle and pigs together in open fields with unhusked corn, eliminating the need for barns and reducing labor costs. Cattle ate the corn kernels and green roughage, while pigs followed to consume whatever the cattle missed or failed to digest. As corn-fed agriculture replaced forest foraging, farmers needed pigs that could efficiently convert grain to meat. After 1700, English farmers began importing Chinese hogs and crossbreeding them with local types to create breeds that fattened quickly while confined. Through selective breeding-sometimes involving intense inbreeding-they developed the major "heritage" breeds by 1850. These improved pigs had thinner bones, shorter legs, smaller heads, and crucially, longer intestines (18:1 ratio compared to wild boars' 10:1), allowing them to extract maximum nutrition from feed. American farmers imported these English breeds and created their own varieties like the Poland China, which became the dominant Corn Belt hog. Unlike their forest predecessors that took 2-3 years to reach market size, these new breeds reached slaughter weight in 18 months or less. As intensive agriculture spread westward, the rangy forest hog disappeared-vanishing from Pennsylvania by 1800, Ohio by 1820, and Illinois by 1840. The new breeds that replaced them needed to balance fat production with mobility, as pigs had to walk to market. Before trucks and comprehensive rail networks, drovers herded hundreds or thousands of pigs along established routes, sometimes covering hundreds of miles. This system of small-scale, decentralized pork production would eventually give way to centralized, industrialized slaughterhouses that transformed both the industry and the animals themselves.

Industrial Revolution: The Disassembly Line

Cincinnati emerged as the center of America's pork industry in the early 19th century, much to the dismay of English visitor Frances Trollope. In her 1831 book, she complained that her feet "literally got entangled in pigs' tails and jawbones" while walking through the city. When she discovered a slaughterhouse being built near her cottage and inquired whether it might be prohibited as a nuisance, she was told: "That may do very well for your tyrannical country, where a rich man's nose is more thought of than a poor man's mouth; but hogs be profitable produce here." The pork packing business required substantial capital and carried considerable risk. Packers bought hogs in fall, slaughtered them, cured the meat, and sold it in spring when rivers thawed-waiting 5-6 months for returns on their investment. In the 1820s, Cincinnati became "Porkopolis," the industry's center, benefiting from its location near corn-growing regions and access to skilled workers. The genius of the pork industry lay in its revolutionary "disassembly line" that inspired Henry Ford's later automobile assembly line. Pigs were driven up a "Bridge of Sighs" to the top floor, chained by the leg to an overhead rail, killed, bled, scalded in near-boiling water, and scraped clean of hair. Workers then attached a gambrel to spread the rear legs and hung the carcass on "the railroad"-an overhead track that moved pigs through a series of stations where workers had just 12 seconds each to perform specialized tasks. Packers truly did "use everything about the hog except the squeal." They preferred corn-fed pigs weighing about 200 pounds, which produced firmer, more shelf-stable fat than acorn-fed hogs. Most meat was preserved as "barreled pork"-brined in salt, sugar, and saltpeter-with quality grades from "clear pork" (for New England fishermen) down to "prime" (for slaves). Every part found a market: hams commanded premium prices; feet and tongues were pickled; heads became headcheese; organs and trimmings became sausage; and fat was rendered into lard-America's primary cooking fat until the mid-20th century. Even by-products found uses: bristles for brushes, blood for dyes and pharmaceuticals, bones for buttons and gelatin, hooves for glue. Americans were prodigious meat consumers, eating far more than Europeans-about 170 pounds per capita annually between 1900-1909, compared to 120 pounds in Britain and just 81 in France. Though Americans saw themselves as beef eaters, pork actually dominated consumption until the 1950s. As one physician wrote in 1860, the United States might properly be called "the great Hog-eating Confederacy, or the Republic of Porkdom."

The Modern Transformation: From Farm to Factory

In 1986, facing declining sales, the National Pork Producers Council unveiled a revolutionary marketing campaign: "Pork-the Other White Meat." Initially shocking to producers who had always considered pork a red meat competing with beef, the campaign repositioned pork as an alternative to chicken during a time when Americans feared fat and red meat's links to heart disease. With ice skater Peggy Fleming as spokeswoman and a $9 million advertising budget, the campaign became one of the most successful rebranding efforts in food industry history. But this wasn't merely marketing-it represented the culmination of a transformation in American pig farming that had created an entirely new animal. The Corn Belt historically produced "lard-type" hogs with thick back fat, unlike leaner "bacon-type" hogs raised elsewhere. American farmers favored fatty pigs because lard was valuable as an industrial lubricant and cooking fat. But as petroleum products replaced animal lubricants and health concerns about animal fats grew, lard demand plummeted. As America's pigs changed, so did their farming methods. Pre-WWII pigs roamed pastures, eating diverse feeds and fattening on corn in fall. Most farmers practiced mixed agriculture for security. By the 1950s, pigs began eating corn-soy diets supplemented with antibiotics, which researchers discovered promoted growth. The FDA approved antibiotics as feed supplements with little scrutiny, and usage skyrocketed from 1.2 million pounds in the 1960s to 25 million pounds by the late 1990s. By the 1980s, modern pig production meant animals never touched soil. They lived in standardized metal buildings with slatted concrete floors and no bedding. Waste fell through to gutters below, flowing to manure lagoons. Windowless barns used automated ventilation systems and minimal lighting. Breeding became tightly controlled, with three-quarters of sows impregnated through artificial insemination by 2000. Scientists truly created "the other white meat"-factory-farmed pork contained myoglobin levels closer to chicken than beef because confined pigs rarely exercised their muscles. Despite marketing efforts, pork consumption remained flat while chicken consumption continued climbing. In the rush to create lean pigs, flavor was sacrificed. Industry experts acknowledged their breeding schemes created fast-growing, efficient pigs that lacked "the superior meat and eating quality consumers prefer." A veterinarian visiting a confinement facility around 1990 discovered a pregnant sow with a broken leg who would be left to suffer for a week until giving birth, after which she would be shot. When he offered to splint her leg for free, the manager refused, explaining that with 5,000 sows and just three employees, they lacked the manpower to care for her. The vet concluded that "if it is not feasible to do this in a confinement operation, then there is something wrong with confinement operations."

Full Circle: The Return to Humane Farming

As society grows increasingly concerned about animal welfare, some farmers are reconsidering the ethics of industrial pig farming. Colorado State ethicist Bernard Rollin witnessed this firsthand when a hog farmer pledged to tear down his confinement barn after Rollin's speech about animal ethics. This sentiment inspired Chipotle's animated film "Back to the Start," showing a farmer returning to traditional methods. Global meat consumption is rising dramatically, especially in developing countries where it doubled between the 1960s and 2000. China and Brazil lead this growth, with meat production in developing nations increasing 300% between 1980 and 2004. China's pork demand is particularly significant, leading to its maintenance of a strategic pork reserve and the $5 billion purchase of Smithfield Foods by Chinese producer Shuanghui International in 2013. As China rapidly transforms its pork production from small farms to industrial operations, Western scientists are rediscovering pigs' natural behaviors. In the late 1970s, researchers Stolba and Wood-Gush created a "pig park" in Scotland where they observed commercial pigs reverting to behaviors nearly identical to wild boars. The pigs spent 6-8 hours daily rooting and foraging, formed complex social bonds, built communal nests, maintained hygiene by defecating away from sleeping areas, and displayed strong maternal instincts. The animal welfare movement gained momentum after Ruth Harrison's 1964 book "Animal Machines" prompted Britain's Brambell Commission to establish the "five freedoms" for livestock. The EU later issued mandatory standards requiring larger solid flooring areas, narrower slats to prevent foot injuries, materials for rooting, and most significantly, a ban on gestation crates in favor of group housing. Paul Willis, who created Niman Ranch's pork operation, rejected confinement farming after returning to his family farm in Iowa. In the mid-1990s, he partnered with Bill Niman to sell premium pork from pigs raised outdoors or in deeply bedded pens where they could express natural behaviors. His network grew to hundreds of farms, offering an alternative for farmers during the historic price lows of 1998-1999. Despite growing popularity, "niche meat" remains a tiny segment of the market. Even if production has quadrupled in the past decade, alternative pork would account for just 3 percent of American pork sales. The primary obstacle is price-modified welfare systems increase costs by at least 30 percent, while fully pastured heritage breeds cost even more. As Chuck Talbott of Woodlands Pork explains: "You've got the rich farmers feeding the poor families, and the poor farmers feeding the rich families." Despite centuries of changing production methods, attitudes toward pork remain remarkably consistent. A 2013 study found only 64 percent of Americans eat pork weekly (compared to 92 percent for beef), with pork ranking behind beef, chicken and fish as a protein choice. The demographic patterns mirror ancient times: rural dwellers, southerners and the poor eat more pork than urbanites, northerners and the wealthy-just as in the 1950s and even 3,000 years ago when ruling classes avoided pork. Today, however, a new reason for pork avoidance has emerged: growing awareness of pig intelligence contrasted with their brutal treatment in industrial farming. Modern critics have created a new language of pig disgust-not about the animals' natural behaviors but about how humans treat them. Meanwhile, a growing movement of small farmers and chefs are reviving heritage breeds like Berkshire, Tamworth, Mangalitsa and Ossabaw, raising them on pasture or in deeply bedded barns. These "new pig lovers" reject industrial pork while embracing traditional farming methods that have worked for thousands of years.
