Ce surnom trouve son origine en 1491, lorsque le maire et les bourgeois de la ville ont soutenu un prétendant au trône d'Angleterre nommé Perkin Warbeck. Bien que cette tentative de renverser le roi Henri VII ait été un échec total et ait conduit à l'exécution du maire, l'acte de défi a marqué l'identité de la ville. Cet esprit de résistance s'est confirmé des siècles plus tard, durant la guerre d'indépendance irlandaise dans les années 1920, lorsque la ville a subi d'importants incendies volontaires de la part des forces britanniques en représailles à son activisme républicain.
Oui, le nom même de la ville, Corcaigh, signifie « le marécage ». À l'origine, Cork était un réseau d'îles boueuses et de bras de rivière. Jusqu'à la fin du 18e siècle, des rues aujourd'hui célèbres comme St Patrick's Street étaient des canaux navigables où les bateaux circulaient. Après le siège de 1690 et la destruction des remparts médiévaux, les habitants ont entrepris des travaux colossaux pour drainer les marécages et recouvrir les canaux afin de créer les larges avenues actuelles, ce qui explique la forme courbe de certaines rues qui suivent les anciens tracés de l'eau.
Le port de Cork, et plus particulièrement la localité de Cobh (anciennement Queenstown), a été le principal point de départ pour des millions d'Irlandais fuyant la Grande Famine et la pauvreté au 19e siècle. On estime que sur les 6 millions d'émigrants irlandais, environ 2,5 millions sont passés par ce port, surnommé le « port des larmes ». C'est d'ailleurs une jeune fille originaire de Cork, Annie Moore, qui est entrée dans l'histoire en devenant la toute première immigrante enregistrée à Ellis Island, à New York, en 1892.
Au 18e siècle, Cork a connu un âge d'or économique grâce au commerce du beurre. La ville abritait le « Butter Exchange » dans le quartier de Shandon, qui était alors le plus grand marché au beurre du monde. Le produit était collecté auprès des fermiers de toute la région, classé par qualité, puis exporté dans des fûts en chêne vers l'Europe, les Antilles et l'Amérique. À son apogée, Cork contrôlait près de 90 % des exportations de beurre irlandais vers le continent américain, faisant la fortune d'une élite de marchands locaux.
Spike Island est une île située dans le port de Cork qui résume à elle seule l'histoire de l'Irlande. Successivement monastère au 7e siècle, forteresse militaire en forme d'étoile et prison, elle a été la plus grande prison du monde au milieu du 19e siècle, durant la Grande Famine. Surnommée « l'Alcatraz de l'Irlande », elle a accueilli des milliers de prisonniers, y compris des enfants condamnés pour des délits de pauvreté. La prison est restée en activité sous différentes formes jusqu'en 2004 avant de devenir une attraction touristique majeure.
