Why was making mud considered a crime by the Pharisees?

According to the religious traditions of the time, specifically the oral laws later recorded in the Mishnah, there were thirty-nine categories of forbidden work on the Sabbath. One of these categories was "kneading." By mixing saliva with dirt to create clay or mud, Jesus was technically performing an act of kneading, which the Pharisees interpreted as a violation of the Sabbath.
