The wealthy McIlhenny and Avery families, who had retreated there to escape the war, suddenly found themselves operating a vital Confederate resource. Union forces made several attempts to capture this strategic asset, finally succeeding on April 17, 1863, when they destroyed eighteen buildings, equipment, and 600 barrels of salt. After the Civil War ended, Edmund McIlhenny, who had fled to Texas during the war, returned with worthless Confederate currency from his salt fortune. Unable to resurrect his banking career in post-war New Orleans, McIlhenny encountered small red chili peppers. In 1866, he returned to Avery Island to become a gentleman farmer experimenting with these peppers. McIlhenny fermented ripe red peppers using Avery Island salt, adapting sauerkraut techniques. He aged the mixture in barrels sealed with salt crust before straining and adding French white wine vinegar. In 1869, he produced 658 bottles sold at $1 each wholesale. Initially named "Petite Anse Sauce," family objections led him to rename it "Tabasco" after the Mexican state known for hot peppers.

Gandhi's Salt March and the End of Empire

Twentieth-century India suffered under colonial administration that managed Indian salt for the benefit of British Cheshire. Before British interference, India had abundant, affordable salt despite its vast saltless regions. The country possessed natural salt fields on both coasts and substantial inland deposits. Religious Hindus preferred solar-evaporated sea salt over rock salt or boiled salt. When Cheshire salt producers sought overseas markets in the late 18th century, they couldn't compete with Orissa's superior salt. After being refused permission to buy all Orissa salt in 1790, the British simply banned it in Bengal. When smuggling flourished across the difficult-to-patrol jungle border, the British army occupied Orissa in 1803. By November 1804, the British proclaimed a complete salt monopoly, prohibiting private salt sales and transport. Within a decade, non-British salt manufacturing became illegal. The malangis, once independent salt workers, were trapped in debt bondage to the British salt department, with thousands dying annually from epidemics. To enforce their monopoly, the British established a "Customs Line" around Bengal that eventually stretched 2,500 miles across India. They even constructed a massive fourteen-foot-high thorn hedge to prevent salt smuggling, employing 12,000 people by 1870 to maintain this barrier and collect salt taxes. The first public protest against British salt policy occurred in Orissa in February 1888. Throughout the early twentieth century, British salt policy faced increasing opposition in provincial legislatures. By 1929, Pandit Nilakantha Das demanded revival of salt making in Orissa and complete repeal of the salt tax. Mohandas Karamchand Gandhi was born October 2, 1869, in Porbandar on the Gujarat peninsula, not far from the Rann of Kutch. Despite his later reputation for simplicity and self-denial, young Gandhi struggled with uncontrolled appetites. Gandhi's philosophy was shaped by Hindu teachings, Jainism, and Western thinkers like Henry David Thoreau, whose "Civil Disobedience" he read while imprisoned in South Africa. The salt satyagraha began taking shape during the 1929 Indian National Congress session in Lahore. Though salt wasn't yet a national issue, Gandhi argued it touched all Indians regardless of caste-everyone ate salt, except Gandhi himself, who had renounced it six years earlier. On March 12, 1930, Gandhi and seventy-eight followers left his ashram to walk 240 miles to the sea at Dandi. They traveled twelve miles daily through scorching heat, with the sixty-year-old Gandhi leading with his bamboo walking stick. After twenty-five days, Gandhi reached Dandi not with seventy-eight followers but thousands. Following night prayers and a purification ceremony at dawn, Gandhi waded into the water, then bent down to pick up a chunk of salt crust, breaking British law as a pilgrim shouted, "Hail, deliverer!" The salt protests spread rapidly across India's coastline, with women playing a significant role in organizing demonstrations. Police responded with violence, but protesters remained nonviolent. After just one week, Gandhi's symbolic act at Dandi became a national movement. The British responded with mass arrests, filling prisons with as many as 100,000 protesters including all major leaders. Despite this, the salt movement continued, forcing the government to negotiate with jailed leaders. On March 5, 1931, Lord Irwin signed the Gandhi-Irwin pact, ending the salt campaign. Indians living on the coast could collect salt for personal use, political prisoners were released, and a conference was scheduled to discuss British administration in India. Gandhi considered it a victory because England and India were finally talking as equals rather than master and subject. When Irwin suggested they drink tea to seal the pact, Gandhi said his tea would be water, lemon, and a pinch of salt.

Salt in the Modern World: From Commodity to Luxury

The United States dominates global salt production and consumption, generating over 40 million metric tons annually worth more than $1 billion. American salt production is remarkably diverse in both source and purpose. Only 8 percent goes to food, while 51 percent is used for deicing roads. Sources include the Great Salt Lake, Cargill's 1,200-foot-deep Detroit mine with fifty miles of underground roads, and the Avery Island mine leased from the McIlhenny and Avery families. The Avery Island operation, taken over by Cargill in 1997, can extract nineteen tons of salt in just ninety seconds, producing 2.5 million tons annually. The salt dome is a column of 99.25-99.9 percent pure sodium chloride crystal extending approximately 40,000 feet (almost eight miles) deep. Mining operations currently reach 1,600 feet down, with miners working in pitch darkness so complete "it hurts your eyes." Salt mines have proven valuable beyond salt production due to their remarkable preservation properties. Their low, steady humidity and even temperatures, combined with salt's natural sealing ability as crystals grow over cracks, create perfect preservation environments. This sealing property has led engineers to consider salt mines for nuclear waste storage. A Carlsbad, New Mexico mine is being prepared for plutonium-contaminated waste that will remain toxic for 240,000 years. Many former salt operations have found new economic life through tourism and health applications. The Durnberg mine in Hallein, Austria closed salt production in 1989 but still attracts 220,000 annual visitors who ride the wooden slides once used to transport miners. Most remarkably, the salt industry has come full circle in a fascinating fashion reversal. After thousands of years of striving to make salt white and uniform, affluent consumers now pay premium prices for salts with odd shapes and colors. Gray, black, and visibly "impure" salts command high prices from consumers who distrust modern factory salt with its additives like iodine or anticaking agents. This trend has revitalized traditional salt-making regions like Guerande, Noirmoutier, and Ile de Re, where salt businesses nearly died in the 1980s. In Noirmoutier, a 1995 cooperative effort brought back traditional salt making, growing from twenty-one producers to nearly 160. These regions now attract young French people seeking agricultural lifestyles, with one-third of Noirmoutier's salt makers under thirty-five. The paludiers of Guerande exemplify this revival, though only 20% are locals now, with most being urban transplants seeking traditional craftsmanship. They produce both gray salt and the highly prized fleur de sel, which commands prices ten times higher. The method for harvesting fleur de sel dates back to ancient times, with Cato describing the process in the second century BCE. This return to artisanal salt production represents a fascinating full circle in human history-from commodity to luxury, from necessity to choice. After millennia of wars, monopolies, and revolutions centered on this essential mineral, we now have the luxury of choosing our salt based on flavor, color, and origin rather than mere availability. Perhaps this is the ultimate testament to salt's enduring importance in human culture-even in an age of abundance, we still treasure the perfect crystal.
